Sous Vide is my current favorite method for most meats and vegetables but I employ many other techniques in the search for the perfect bite.
Honestly, we don't eat out much. But, when we do there is a very short list of restaurants we seem to gravitate toward. I like Texas BBQ and the best we have found in the Dallas area is The Pecan Lodge and Cattleack (:-)! Kenny's Smoke is also worth the visit.

My version of the classic French Apple Cake is a lower Gluten, lower sugar version. Please note I did not say low fat or low taste! The butter is still there after all!
My version of Tiramisu is not a strictly 100% authentic Italian version. I have refined this recipe over the years to suite my palate…. and it seems to appeal to others as well when served. Keep in mind this is NOT DIET FOOD! In fact, it is not low anything. But that said…. sometimes it sure is nice to have something that truly satisfies. Use with caution and in moderation!
A recipe that has developed over the course of 45+ years (Yes.... I'm that Freaking Old!), and is still in development! Good chili is easy.... Great Chili takes time and effort!!

Japanese Pork Cutlet.... Melt in your mouth good! I threw in recipes for Asian Slaw and Katsu Sauce for a complete meal.
This Japanese Cheesecake is fluffy, delicate and not overly sweet. When I make this recipe, I like to make a double batch, creating two nice six-inch Cheesecakes. I usually give one away and enjoy the other as either a dinner dessert, or a small slice as the perfect breakfast finisher.
